From the vegetable garden to artisanal cheeses: discover the gastronomic treasures of Alta Langa you might not know. A journey through authentic flavors and stories of local producers.

Excellence products in Alta Langa: stories, flavors and sustainability

Alta Langa is famous for its PGI hazelnut, but stopping there would be limiting. This rugged and generous land holds a gastronomic wealth made of mountain pasture cheeses, ancient cured meats, wild herbs, black and white truffles and vegetables that still taste of the season.

At Cascina Facelli we celebrate these treasures every day. We bring them to the table at breakfast, on aperitif boards. But above all, we tell their stories, because behind every flavor there is a story.

Beyond the hazelnut: hidden gastronomic gems

🧀 Raw mountain pasture cheeses

Produced between spring and late summer in small mountain pastures: aged tomes, goat robiola, mixed milk cheeses with bloomy rind.
Each piece is unique, just like the pasture it comes from.

🥓 Cured meats of Alta Langa

Few know them outside the region, but they are a true discovery:

  • Lard flavored with local herbs
  • Cooked salami from Murazzano
  • Fresh Bra sausage, to be enjoyed raw with homemade bread

🌱 Garden vegetables and homemade preserves

Cascina Facelli cultivates a small vegetable garden using natural methods: trombetta zucchini, cuore di bue tomatoes, wild aromatic herbs, later transformed into preserves, pickles, and jams (when the fruit trees cooperate!).

🍯 Honey and chestnuts

Alta Langa honey, often chestnut or wildflower, has a strong and decisive aromatic profile. Excellent with cheeses or at breakfast.
Chestnuts, harvested between October and November, become creams, flour, and traditional desserts.

Small local producers: an economy to support

Behind every product there are faces, hands, families that pass down ancient recipes and techniques. Here are some businesses to know (and support):

  • Casa Matilda (Dogliani): organic cultivation and processing of vegetables into preserves and sauces.
  • Caseificio Cascina Abate (Bossolasco): sheep’s tuma according to the historical specification and more!!
  • Apicoltura Alta Langa (Feisoglio): raw, unpasteurized honey.
  • Macelleria Mollo (Bossolasco): artisanal cured meats following Langhe tradition.

At Cascina Facelli we buy from these businesses and gladly recommend direct visits and tastings for those who wish to enjoy an immersive gastronomic experience.
