The Doughnuts of Happiness

Soft, fragrant, sugary. Graffe are a dessert that instantly puts you in a good mood, with the scent of home, slow breakfasts, and Sunday mornings.
Tiziana’s version is a personal recipe, without potatoes in the dough, but with all the flavor and softness of traditional graffe.

Easy to make, perfect to fry on the spot and enjoy while still warm. A real treat.

A Simple and Always Soft Version

Unlike the classic Neapolitan versions that require boiled potatoes, these graffe are lighter and made with a simple, well-kneaded leavened dough.

Ideal to make even without a stand mixer—you just need your hands, a little patience, and the right oil for frying.

🧾 Ingredients:

  • 500 g all-purpose flour
  • 35 g sugar
  • 50 g butter, cut into pieces
  • 2 eggs
  • 150 ml lukewarm water
  • 13 g fresh brewer’s yeast
  • 1 sachet vanilla powder
  • A pinch of salt
  • Granulated sugar, as needed (for coating)
  • Sunflower seed oil (for frying)

👩‍🍳 Method:

  1. Dissolve the yeast in lukewarm water.
  2. In a bowl, combine flour, sugar, vanilla, salt, eggs, softened butter, and the water with yeast.
  3. Knead until you get a smooth and well-strung dough.
  4. Cover with a cloth and let rise for about 2 hours, until doubled in size.
  5. Roll the dough to about 1 cm thick and cut out doughnuts with a pastry cutter.
  6. Place them on a floured tea towel and let them rise for another 1 hour.
  7. Fry a few graffe at a time in hot oil, turning them on both sides.
  8. Drain on paper towels and immediately roll in granulated sugar.
  9. Serve warm—they’re irresistible!
